Banana Apple Zucchini Bread

  1. Preheat oven to 350 degrees. Grease two 9x5 bread loaf pans and/or line with paper cups or grease a muffin pan.
  2. To prepare the batter, in a medium bowl, mix all the dry ingredients together. Set aside. In a stand mixer, with the paddle attachment, beat the eggs. Add the sugars, butter, and vanilla. Gradually, add in the dry ingredients. Then fold in the shredded zucchini, apple and mashed bananas.
  3. Now, this is what I did: I filled each muffin cup 3/4 full. In a small bowl, prepare the streusel by combining the 1/4 cup chopped walnuts, flour, brown sugar and cinnamon. Cut in the cold butter until it resembles coarse crumbs. Sprinkle over muffins. Bake for 20 minutes.
  4. I then add the 3/4 cup walnuts to the remaining batter and divide the batter between the 2 loaf pans. Bake for 45 minutes.
  5. You can definitely make more streusel and top the bread loaves as well. Hope you enjoy it!
