Apple Arugula Salad With Carrots And Cabbage
- FOR THE SALAD:
- 1 cup Coarsely Shredded (or Thinly Sliced) Carrots
- 1 cup Thinly Sliced Green Cabbage
- 1 cup Thinly Sliced Red Cabbage
- 1 Medium Apple (cored With Peel Left On), Diced Into Matchstick-size Strips Or Small Cubes
- 2 cups Baby Arugula
- FOR THE DRESSING:
- 1 Tablespoon Olive Oil
- 2 Tablespoons White Wine Vinegar Or Cider Vinegar
- 1 teaspoon Maple Syrup (or Half This Amount And Use Granulated Sugar)
- 1/4 teaspoons Salt
- 1 whole Orange, Mandarin, Or Other Sweet Citrus, Juiced
- 1. Combine salad ingredients in a medium-sized bowl.
- 2. In a small measuring cup or jar, combine dressing ingredients. Whisk or shake to combine.
- 3. Pour dressing over salad and mix to combine.
