Slow Cooker Pozole Soup
- 3 whole Seasoned And Cooked Boneless, Skinless Chicken Breasts, Diced Or Shredded
- 1 whole Small Yellow Onion, Diced
- 3 cloves Finely Minced Garlic
- 1 whole Seeded And Diced Jalapeno
- 1 whole Seeded And Diced Small Dried Ancho Chile
- 6 cups Strained And Rinsed Canned Hominy
- 64 ounces, weight Chicken Stock
- 3 Tablespoons Dried Oregano
- Kosher Salt And Fresh Cracked Pepper To Taste
- FOR GARNISH:
- Sliced Avocado
- Sliced Lime
- Sliced Radishes
- Tortilla Chips
- Place all ingredients, except salt and pepper, in a slow cooker. Put on the lid and cook on low heat for 6 hours.
- Finish the soup by adjusting the seasonings with salt and pepper. Serve in bowls, topped with garnishes.
