Kickin’ Pasta Sauce
- 1 package (about 1 Pound) Italian Smoked Sausage (or Any Meat You Want, Really)
- 1 whole Onion, Chopped
- 4 cloves Garlic, Minced
- 1 teaspoon Olive Oil
- 2 cans (28 Oz. Can) Italian Style Stewed Tomatoes
- 2 jars (7 Oz. Each) Roasted Red Peppers
- 2 teaspoons Sugar
- 1 teaspoon Cumin
- 1/2 teaspoons Oregano
- 1/2 teaspoons Cayenne
- 1/2 teaspoons Red Wine Vinegar
- 1/2 teaspoons Salt
- Saute meat, onion, and garlic in a little olive oil. Put all other ingredients in a blender and blend until pureed (you might have to do it in batches). Mix together and bring to a simmer. Use reserved tomato liquid to thin out sauce to desired consistency. Serve over pasta. Makes 12 servings (at least!).
- Note: This recipe is easy to half and freezes well.
