Double Chocolate Bacon Cookies

  1. 1. Preheat oven to 350 degrees F.
  2. 2. Cook bacon until browned and crispy. Set bacon aside to cool. Crumble once cooled. Reserve bacon grease.
  3. 3. Beat together sugar, butter, eggs, and vanilla extract in a large bowl until smooth. Stir in flour, cocoa powder, baking soda, and salt. Dough will be dry/crumbly. Add enough of the reserved bacon grease a little at a time until you have a smooth, glossy dough (I usually use about 2 tablespoons worth).
  4. 4. Stir in chocolate chips and crumbled bacon.
  5. 5. Drop tablespoons of dough onto an ungreased cookie sheet about 2 inches apart.
  6. 6. Bake for 10 to 12 minutes. Let stand 5 minutes before transferring to wire racks to cool completely.
