Double Chocolate Bacon Cookies
- 6 slices Bacon
- 2 Tablespoons Reserved Bacon Grease
- 1-1/2 cup White Sugar
- 1 cup Butter, Softened
- 2 whole Eggs
- 2 teaspoons Vanilla Extract
- 2 cups All-purpose Flour
- 3/4 teaspoons Baking Soda
- 2/3 cups Dark Chocolate Unsweetened Cocoa Powder
- 1/4 teaspoons Salt
- 2 cups Dark Chocolate Chips
- 1. Preheat oven to 350 degrees F.
- 2. Cook bacon until browned and crispy. Set bacon aside to cool. Crumble once cooled. Reserve bacon grease.
- 3. Beat together sugar, butter, eggs, and vanilla extract in a large bowl until smooth. Stir in flour, cocoa powder, baking soda, and salt. Dough will be dry/crumbly. Add enough of the reserved bacon grease a little at a time until you have a smooth, glossy dough (I usually use about 2 tablespoons worth).
- 4. Stir in chocolate chips and crumbled bacon.
- 5. Drop tablespoons of dough onto an ungreased cookie sheet about 2 inches apart.
- 6. Bake for 10 to 12 minutes. Let stand 5 minutes before transferring to wire racks to cool completely.
