Apple Blondies
- 1 cup All-purpose Flour
- 1 teaspoon Baking Powder
- 1/4 teaspoons Salt
- 1/4 teaspoons Cinnamon
- 1/4 cups Butter, Melted
- 1/2 cups Packed Light Brown Sugar
- 1/2 cups White Sugar
- 1 whole Egg
- 1 teaspoon Vanilla
- 1/2 cups Chopped Granny Smith Apple (approximately 1/2 Apple)

- FOR THE CINNAMON SUGAR:
- 2 Tablespoons White Sugar
- 2 teaspoons Cinnamon
- 1. Preheat oven to 350 degrees. Grease a 9x9 inch pan.
- 2. Whisk together flour, baking powder, salt, and 1/4 teaspoon of cinnamon; set aside.
- 3. In a large bowl, mix together melted butter, brown sugar, and 1/2 cup of white sugar with a wooden spoon until smooth. Stir in the egg and vanilla.
- 4. Blend in the flour mixture until just combined, then stir in the apples. It will have a weird consistency and you won't think this is gonna work.
- 5. Spread the mixture evenly into the prepared pan. You'll still feel uneasy about in because it won't spread well.
- 6. In a small bowl, stir together the remaining cinnamon and sugar; sprinkle over the top of the bars.
- 7. Bake for 25 to 30 minutes in the preheated oven until nice and brown (goldeny? The cinnamon makes in hard to tell but they will spring back when lightly touched).
- 8. Cool in the pan, and cut into squares.
