Apple Blondies

  1. 1. Preheat oven to 350 degrees. Grease a 9x9 inch pan.
  2. 2. Whisk together flour, baking powder, salt, and 1/4 teaspoon of cinnamon; set aside.
  3. 3. In a large bowl, mix together melted butter, brown sugar, and 1/2 cup of white sugar with a wooden spoon until smooth. Stir in the egg and vanilla.
  4. 4. Blend in the flour mixture until just combined, then stir in the apples. It will have a weird consistency and you won't think this is gonna work.
  5. 5. Spread the mixture evenly into the prepared pan. You'll still feel uneasy about in because it won't spread well.
  6. 6. In a small bowl, stir together the remaining cinnamon and sugar; sprinkle over the top of the bars.
  7. 7. Bake for 25 to 30 minutes in the preheated oven until nice and brown (goldeny? The cinnamon makes in hard to tell but they will spring back when lightly touched).
  8. 8. Cool in the pan, and cut into squares.
