Banana Oatmeal Chocolate Chip Cookies
- 2 whole Large Bananas, Peeled And Mashed
- 1/3 cups Almond Butter
- 1/3 cups Extra Virgin Olive Oil
- 3/4 cups Coconut Sugar
- 1 whole Large Egg
- 1 teaspoon Pure Vanilla Extract
- 3 cups Gluten Free Rolled Oats
- 1/4 cups Gluten-Free Oat Flour
- 1/4 cups Almond Flour
- 1 teaspoon Baking Powder
- 1 teaspoon Baking Soda
- 1/2 teaspoons Salt
- 1 cup Dark Chocolate Mini Chips
- Preheat the oven to 350 F. Line a baking sheet with parchment paper.
- In a large mixing bowl, combine the bananas, almond butter, oil, sugar, egg, and vanilla until combined. Stir in the oats, oat flour, almond flour, baking powder, baking soda and salt. Fold in the chocolate chips.
- Drop the batter by rounded tablespoons onto the prepared baking sheet spacing them about 2 inches apart. Bake for 10-12 minutes, or until the cookies are lightly golden brown. Remove from oven. Let them cool for 5 minutes on the baking sheet.
