Lucky Ducky St. Patty’S Day Cheesecake Bars
- 1 package Refrigerated Pillsbury Ready To Bake! Big Deluxe Chocolate Chip Cookies With Hershey's Mini Kisses, 16 Ounce Package
- 2 packages (8 Oz Each) Philadelphia Cream Cheese, Softened
- 1/2 cups Sugar
- 3 Eggs
- 1/2 teaspoons Vanilla Extract
- Green Food Coloring
- 1. Preheat your oven to 350 F and line a 9" x 9" baking pan with parchment paper.
- 2. Remove the refrigerated cookie dough from the package and with your fingers press it evenly on the bottom of the prepared pan.
- 3. Bake in preheated oven for 18 minutes. The dough will be slightly puffed up but not fully cooked. Remove from the oven and set aside to cool.
- 4. In a large bowl, beat the cream cheese and sugar with an electric mixer on medium speed until smooth and creamy.
- 5. Add eggs, one at a time, beating until smooth. Stir in the vanilla and add the green food color until you reach your desired color and it's well combined.
- 6. Pour the cheesecake filling over the cookie dough, smooth the top and bake in the preheated oven for 30 minutes or until the center is just set. Remove from oven.
- 7. Let the cheesecake cool at room temperature for at least 1 hour and refrigerate for 4 hours before cutting into bars.
