Single Gal Microwave Chocolate Peanut Butter Cake
- FOR THE CAKE:
- 1/4 cups Raw Organic Cocoa Powder
- 2 Tablespoons PB2 (Powdered Peanut Butter)
- 1 Tablespoon Water
- 3 Tablespoons Unsweetened Vanilla Almond Milk
- 1 whole Large Egg White
- 3 teaspoons Granulated Stevia
- FOR THE FROSTING:
- 1 Tablespoon PB2 (Powdered Peanut Butter)
- 3 teaspoons Unsweetened Vanilla Almond Milk
- For the cake:
- 1. Grease a small ramekin with cooking spray. Set aside.
- 2. In a small bowl, whisk together all of the cake ingredients until smooth.
- 3. Pour the batter into the prepared ramekin.
- 4. Place the ramekin in the microwave and cook in 20-second intervals until the cake is cooked through and has risen slightly over the top of the ramekin.
- For the frosting:
- 1. To make the frosting, combine the powdered peanut butter and almond milk until smooth.
- 2. Spread the frosting on top of the cake and devour!
