Rice, Paella Style
- 1/2 lb. ready to cook chicken, cut up
- 1 lb. pork meat, cut into 1-inch pieces
- 1/2 lb. fish, cut into 1-inch pieces
- 3 tsp. salt
- 1 tsp. ground oregano
- 8 artichoke hearts
- 3 c. broth
- 1/4 c. olive oil
- 2 chopped onions
- 2 chopped tomatoes
- 2 chopped green peppers
- 1 c. shrimp
- 8 clams
- 3 c. rice
- Rub chicken, pork meat and fish with salt and oregano.
- Prepare a broth using the wings, neck and bones from the meat.
- Heat olive oil and saute the onions, tomatoes and peppers.
- Add chicken, pork and fish; mix well and simmer for 30 minutes.
- Add shrimp, clams and broth.
- Cover and cook for 5 minutes.
- Add rice and season to taste.
- Cover and cook over low heat; when almost done (about 25 minutes) add artichokes and peas.
- If possible, serve in the same pot it was cooked in.
- Garnish with strips of pimento.
