Rice, Paella Style

  1. Rub chicken, pork meat and fish with salt and oregano.
  2. Prepare a broth using the wings, neck and bones from the meat.
  3. Heat olive oil and saute the onions, tomatoes and peppers.
  4. Add chicken, pork and fish; mix well and simmer for 30 minutes.
  5. Add shrimp, clams and broth.
  6. Cover and cook for 5 minutes.
  7. Add rice and season to taste.
  8. Cover and cook over low heat; when almost done (about 25 minutes) add artichokes and peas.
  9. If possible, serve in the same pot it was cooked in.
  10. Garnish with strips of pimento.
