Cheese-Stuffed Meatballs
- 1 pound Ground Beef
- 1 pound Ground Italian Sausage
- 3/4 cups Italian Breadcrumbs
- 1 cup Finely Grated Parmesan Cheese
- 2 Tablespoons Minced Garlic
- 1 whole Medium Yellow Onion, Diced
- 2 whole Eggs
- 1 package String Cheese (at Least 6-count Size Package)
- Preheat oven to 350 F. In a large bowl, thoroughly mix together all ingredients except for the string cheese.
- Take 6 strings of cheese and unwrap them then slice each into about 5 equal pieces. You won't need to use the whole package so continue to slice as you need more cheese.
- Take a small handful of meatball mixture and roll it around with your hands. Place a piece of the cheese in the middle and roll until it's completely covered. Place meatballs on a rimmed baking sheet. Continue until you've used all of the meat mixture.
- Bake for approximately 30 minutes, or until browned. The cheese may bubble slightly outside of the meatballs (yum). I take the pan of meatballs out of the oven a few times as they are cooking and roll them around so that they cook evenly on all sides.
- Remove from oven and serve, either alone or with a dipping sauce! This makes a great appetizer, or is perfect with spaghetti or in a sub roll!
