“Sick Baby” Quick Chicken Noodle Soup
- 1 pound (Fresh Or Frozen) Boneless Chicken Breasts
- 2 cans (14.5 Oz. Size) Chicken Broth
- 8 Tablespoons Butter Or Margarine
- 1 dash Dried Celery Flakes
- 1 teaspoon Oregano
- 1 teaspoon Salt
- 1 dash Pepper
- 1/2 teaspoons Lemon Pepper
- 3 Tablespoons Self-Rising Flour
- 1/2 cups Ice Water
- 2 cans (8.5 Oz. Size) Sliced Carrots, Or 4 Fresh Sliced Carrots
- 2 cups Uncooked Pasta Of Choice
- Boil chicken on medium or medium low with chicken broth, butter and all seasonings until done. Remove chicken from broth and pull with forks or chop finely. Set aside.
- Add flour to ice water and whisk until combined. Add to broth and whisk.
- Return chicken to broth along with carrots and pasta. Cook until pasta is done and carrots are warm. (If you used fresh carrots you will want to give them a few minutes before you add the pasta.)
- Serve to sick babies and hear them say, "Now I feel all better, Mommy."
- Notes: I used rotini because it is what I had on hand. It turned out great and was very filling. I might try fettuccini next time.
- You may want to adjust seasonings to get a more robust flavor. I specifically made this simple for my sick little 3-year-old girl.
- I serve this with my cornbread muffins (see my recipe box).
