“Sick Baby” Quick Chicken Noodle Soup

  1. Boil chicken on medium or medium low with chicken broth, butter and all seasonings until done. Remove chicken from broth and pull with forks or chop finely. Set aside.
  2. Add flour to ice water and whisk until combined. Add to broth and whisk.
  3. Return chicken to broth along with carrots and pasta. Cook until pasta is done and carrots are warm. (If you used fresh carrots you will want to give them a few minutes before you add the pasta.)
  4. Serve to sick babies and hear them say, "Now I feel all better, Mommy."
  5. Notes: I used rotini because it is what I had on hand. It turned out great and was very filling. I might try fettuccini next time.
  6. You may want to adjust seasonings to get a more robust flavor. I specifically made this simple for my sick little 3-year-old girl.
  7. I serve this with my cornbread muffins (see my recipe box).
