Malteser & Horlicks Cake
- FOR THE CAKE:
- 130 grams Butter
- 130 grams Golden Caster Sugar
- 2 Eggs
- 130 grams Sell-Rising Flour (must Use Self-rising)
- 110 grams Horlicks
- 1/2 teaspoons Baking Powder
- 3 Tablespoons Milk
- 3 Tablespoons Boiling Water
- Maltesers, As Desired, For Optional Garnish
- FOR THE GANACHE:
- 150 grams Dark Chocolate
- 150 milliliters Double Cream
- For the cake:
- 1. Preheat the oven to 180 C/350 F. Butter and line a 9" cake pan.
- 2. In a large bowl cream the butter and sugar until pale and fluffy. Add an egg, beat it in, then add the other and beat again.
- 3. Sift the flour, Horlicks and baking powder into the bowl, then fold it in until nearly combined. Add the milk and fold again. Finally, add the boiling water and combine.
- 4. Spoon the batter into the pan and put it in the oven.
- 5. Bake for about 20-25 minutes or until cake is a deep gold color a skewer inserted in the center comes out clean. Remove pan from oven and let cake cool.
- 6. Cover the cake in ganache, then top with Maltesers.
- For the ganache
- 1. Break the chocolate up into small pieces and put it into a heat-safe bowl.
- 2. In a small saucepan heat the cream until it starts to steam, then pour it over the chocolate.
- 3. Leave it alone for a few minutes and then stir in until you have a smooth, glossy ganache.
- Notes:
- - Maltesers: yummy round malt honeycomb candy covered in milk chocolate.
- - Horlicks: malted milk powder.
