Halibut With Celery-Mustard Sauce
- 1 1/2 to 2 lb. halibut steaks (1-inch thick)
- 2 stalks celery, sliced
- 2 green onions, sliced (tops included)
- 1/2 c. hot chicken broth
- 1 Tbsp. wine vinegar
- 3 Tbsp. olive oil
- 3 Tbsp. Dijon-style mustard
- 1 Tbsp. paprika
- 1/4 c. sour cream
- Cut halibut into serving pieces, if necessary.
- Spread celery and green onions into lightly oiled baking dish.
- Place halibut over mixture.
- Combine chicken broth, vinegar, olive oil, mustard and paprika.
- Pour over fish.
- Cover with foil.
- Bake at 450u0b0 for 10 to 15 minutes or until fish flakes.
- Remove fish to serving platter.
- Stir sour cream into baking dish, combining with pan juices and vegetables.
- Pour over halibut and serve.
