Hearty Rice Salad

  1. The noted 'Cook Time' is to allow for cooking the rice.
  2. In a large bowl, combine the cooked rice, green onions, almonds, cranberries and peas.
  3. In a small bowl, thoroughly combine the vegetable oil, peanut butter, vinegars, soy sauce and sesame oil.
  4. Stir the dressing into the rice mixture. Chill before serving, about 2 hours.
