Hearty Rice Salad
- 4 cups Cooked Brown Rice Or Brown And Wild Rice Mix
- 6 whole Green Onions, Chopped
- 1 cup Toasted Slivered Almonds
- 1 cup Dried Cranberries Or Cherries
- 1 cup Frozen Peas, Thawed
- 1/2 cups Vegetable Oil
- 4 Tablespoons Natural Peanut Butter
- 4 Tablespoons Seasoned Rice Vinegar
- 2 Tablespoons Red Wine Vinegar
- 2 Tablespoons Soy Sauce
- 1 Tablespoon Toasted Sesame Oil
- The noted 'Cook Time' is to allow for cooking the rice.
- In a large bowl, combine the cooked rice, green onions, almonds, cranberries and peas.
- In a small bowl, thoroughly combine the vegetable oil, peanut butter, vinegars, soy sauce and sesame oil.
- Stir the dressing into the rice mixture. Chill before serving, about 2 hours.
