Ketchup
- 48 ripe tomatoes
- 2 ripe sweet peppers
- 2 sweet green peppers
- 4 onions
- 3 c. white vinegar
- 3 c. sugar
- 3 Tbsp. salt
- 3 tsp. dry mustard
- 1/2 tsp. red pepper
- 1/2 tsp. whole allspice
- 1 1/2 tsp. whole cloves
- 1 1/2 tsp. cinnamon sticks, broken
- Quarter tomatoes and remove stems.
- Add peppers, seeds removed, and slice in strips.
- Add chopped onions.
- Place 1/3 in blender or food processor; mix until smooth.
- Repeat until all tomatoes are blended.
- Add vinegar, salt, sugar and spices, tied loosely in muslin bag.
- Simmer, uncovered, until mixture is reduced to 1/2.
- Pour into hot jars and cover loosely with lids. Process at 212u0b0 for 10 minutes.
- Remove and tighten lids.
- Makes 5 pints.
