Pizza Soup
- 2 Tablespoons Extra Virgin Olive Oil
- 3/4 pounds Italian Sweet Sausage
- 6 ounces, weight Pepperoni Slices, Cut In Half
- 3/4 pounds Ham Steak, Diced
- 1 whole Green Bell Pepper, Diced
- 1 whole Yellow Onion, Diced
- 15 ounces, weight Can Diced Tomatoes
- 6 cups Chicken Stock
- 1 teaspoon Red Pepper Flakes
- 1/2 teaspoons Dried Oregano
- 1 teaspoon Kosher Salt
- 1/2 teaspoons Freshly Ground Black Pepper
- 1/2 pounds Any Short Cut Pasta
- Place a soup pot or deep sided skillet on the stove top and preheat to medium high heat. Add olive oil and the sausage. Brown and crumble the sausage, drain off excess fat if necessary then add the ham and pepperoni. Cook meats together 2 minutes then add pepper and onion and cook 2 or 3 minutes more. Add diced tomatoes and season with salt and pepper. Add chicken stock, red pepper flakes and oregano and bring to a boil. Simmer about an hour then add pasta in the last 10 minutes.
