Shoestring Beets & Radicchio Summer Salad

  1. In a large mixing bowl, add shredded radicchio, shoestring beets, sliced shallots, and grated carrot. Toss gently to mix. In a small bowl, add yogurt, ranch dressing, and black pepper; stir to combine.
  2. Drizzle dressing over salad and toss gently. Garnish with croutons and cheese, if desired. Cover and refrigerate, or serve immediately. Refrigerate any leftovers.
