Cove Cookies
- 1 cup Butter Or Margarine
- 1/2 cups White Sugar
- 1/2 cups Brown Sugar
- 2 whole Eggs
- 1 package (3.4 Oz. Package Or 4-serving Size) Vanilla Instant Pudding Mix
- 1 teaspoon Salt
- 2-1/2 cups Flour
- 1 cup Quick Oats
- 1 teaspoon Baking Soda
- 1-1/2 cup Chocolate Chips
- 3/4 cups Toffee (SKOR) Bits
- Mix the butter, sugars and eggs until smooth in consistency. Add the dry ingredients (vanilla pudding mix, salt, flour, oats and baking soda) in a separate bowl, then add to the wet mixture. Add the chocolate chips and toffee bits last. (A glob of peanut butter is optional.)
- Drop (or roll) on the cookie sheet. (I recommend using parchment paper, as the toffee bits tend to stick to the pan.)
- Bake at 350 degrees for 12-15 minutes, until cooked and firm on the bottom.
- If you prefer softer cookies, throw a piece of bread into your cookie jar. You'll wake up the next day with soft, moist cookies.
