Oatmeal Raisin Cake Mix Cookies

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Beat eggs in a large bowl. Add vegetable oil. Add cake mix and stir ingredients together. Pour in half-and-half and stir.
  3. Add raisins (see note below) and oats, making sure both are incorporated well into the dough mixture. Place dough on a lightly greased baking sheet and bake for 8 to 10 minutes.
  4. Notes:
  5. This recipe is VERY forgiving. If the dough is too thick, add more half-and-half; if the dough is too wet, add more oats. Likewise, add more raisins if desired.
  6. It's very important to use GOLDEN raisins. Even people who don't like raisins love these cookies!
  7. You can make countless variations of this recipe. Instead of using raisins, use chocolate chips and/or heath toffee pieces. You can also use chocolate fudge cake mix and use white chocolate chips. You can use any type of cake mix with any kind of chips (although I would recommend not making red velvet or devil's food cake because they are less dense and drier in nature).
