Oatmeal Raisin Cake Mix Cookies
- 2 whole Eggs
- 1/2 cups Vegetable Oil
- 1 box (about 18 Oz. Box) Golden Yellow Cake Mix (moist Variations Work Best)
- 1-1/2 Tablespoon Half-and-Half Dairy Creamer
- 3/4 cups Golden Raisins
- 3/4 cups Rolled Oats
- Preheat oven to 350 degrees Fahrenheit.
- Beat eggs in a large bowl. Add vegetable oil. Add cake mix and stir ingredients together. Pour in half-and-half and stir.
- Add raisins (see note below) and oats, making sure both are incorporated well into the dough mixture. Place dough on a lightly greased baking sheet and bake for 8 to 10 minutes.
- Notes:
- This recipe is VERY forgiving. If the dough is too thick, add more half-and-half; if the dough is too wet, add more oats. Likewise, add more raisins if desired.
- It's very important to use GOLDEN raisins. Even people who don't like raisins love these cookies!
- You can make countless variations of this recipe. Instead of using raisins, use chocolate chips and/or heath toffee pieces. You can also use chocolate fudge cake mix and use white chocolate chips. You can use any type of cake mix with any kind of chips (although I would recommend not making red velvet or devil's food cake because they are less dense and drier in nature).
