Perfect-Every-Time-Fudge

  1. Combine chocolate, salt, butter and marshmallow cream in a large bowl.
  2. Reserve.
  3. Combine evaporated milk and sugar in a large saucepan; place over moderate heat.
  4. Bring to a full boil, stirring constantly.
  5. Boil 13 minutes.
  6. If you are using a candy thermometer, the temperature of the sugar mixture should register 236u0b0.
  7. Pour hot milk/sugar over chocolate mixture and beat with a spoon until chocolate is melted and blended.
  8. Stir in nuts and vanilla.
  9. Spread into 2 greased 8 x 8 x 2-inch pans and refrigerate until candy is firm.
  10. Cut into small squares.
  11. Makes about 5 pounds.
