Perfect-Every-Time-Fudge
- 3 (6 oz.) pkg. semi-sweet chocolate pieces
- 1/4 tsp. salt
- 1 c. butter or oleo
- 1 (7 oz.) jar marshmallow cream
- 1 (13 oz.) can evaporated milk
- 4 1/2 c. sugar
- 1 c. chopped walnuts
- 1 tsp. vanilla extract
- Combine chocolate, salt, butter and marshmallow cream in a large bowl.
- Reserve.
- Combine evaporated milk and sugar in a large saucepan; place over moderate heat.
- Bring to a full boil, stirring constantly.
- Boil 13 minutes.
- If you are using a candy thermometer, the temperature of the sugar mixture should register 236u0b0.
- Pour hot milk/sugar over chocolate mixture and beat with a spoon until chocolate is melted and blended.
- Stir in nuts and vanilla.
- Spread into 2 greased 8 x 8 x 2-inch pans and refrigerate until candy is firm.
- Cut into small squares.
- Makes about 5 pounds.
