Zucchini Fans With Herb Butter
- 2 Tbsp. fine fresh bread crumbs
- 4 Tbsp. freshly grated Parmesan
- 6 Tbsp. unsalted butter, softened
- 1 tsp. dried tarragon, crumbled
- 4 Tbsp. minced fresh parsley leaves
- 8 zucchini (6-inches long)
- In a small bowl, toss the bread crumbs with the Parmesan.
- In another small bowl, cream together the butter, tarragon and parsley with salt and pepper to taste.
- Keeping attached at one end, cut the zucchini lengthwise into four 1/4-inch thick slices.
- Spread some of the herb butter carefully between the layers and press the slices together lightly.
- Separate the slices slightly to form a fan and bake the fans with 1/4 cup water in a buttered baking pan, 15 1/2 x 10 1/2-inches, in a 350u0b0 oven for 30 minutes or until tender.
- Sprinkle the fans with the bread crumb mixture and broil them under the broiler about 4 inches from the heat until golden.
