Microwave Bread Pudding

  1. In ungreased 2 quart round microproof dish, mix bread and raisins. Beat eggs, sugar, vanilla and salt until well blended. In 4 cup glass measure,heat milk and butter on HI setting 4 1/2 to 5 minutes, or until steaming hot.
  2. Gradually stir in egg mixture. Pour over bread and raisins, sprinkle with cinnamon. Cover with waxed paper. Cook on simmer or lower setting 12 to 15 minutes. When cooked, center may be slightly soft but will set as pudding cools.
  3. Serve warm or chilled.
  4. Not only is this a good and tasty dessert, but an economical way to use up old or dry bread. For an interesting and different taste mix in a teaspoon of grated orange or lemon rind.
