White Chili
- 2 chicken breasts (1 lb.) or 1 lb. ground turkey or chicken
- 1 c. chopped onion
- 1 tsp. minced garlic
- 1 tsp. sugar
- 1/8 tsp. cayenne pepper
- 1 (4 oz.) can minced mild green chillies
- 1 tsp. ground cumin
- 1 tsp. dried oregano
- 1 tsp. salt
- 5 tsp. Minors soup base
- 1 qt. water
- 2 cans white kidney beans
- Saute the chicken breasts cut in bite size pieces (or ground meat) in 1 tablespoon oil.
- Do not brown. Add all the remaining ingredients except white kidney beans. When chicken and onion are cooked, add white kidney beans.
- Heat until serving temperature. Garnish with grated Monterey Jack cheese, 1/2 cup chopped fresh cilantro, sour cream and chopped fresh tomatoes.
- If you prefer hot chili, you may add 1 minced jalapeno or more cayenne.
