Whole Wheat Waffles With Warmed Blueberry Topping
- FOR THE WAFFLES:
- 1-1/2 cup White Whole Wheat Flour
- 2 teaspoons Baking Powder
- 1/2 teaspoons Salt
- 1 teaspoon Stevia (double This Amount If You Prefer Regular Sugar)
- 1 whole Egg
- 1 cup Unsweetened Coconut Milk Or Milk
- 1/2 cups Unsweetened Soy Milk Or Milk
- 1/3 cups Melted Butter Or Vegetable Oil
- FOR THE TOPPING:
- 1 cup Blueberries, Frozen
- 1/2 teaspoons Stevia
- Preheat your waffle iron according to manufacturer's instructions.
- Into a large bowl add flour, baking powder, salt and sugar; whisk until combined.
- In a separate bowl, whisk together the egg, milk and butter. Mix the egg mixture into the flour mixture, stirring just until combined. The batter will be a bit lumpy.
- Cook the waffles as directed in the instructions that came with your waffle iron.
- Meanwhile, in a microwave safe bowl, add blueberries and sprinkle with stevia. Heat for about 1 minute. Remove bowl from the microwave and lightly mash berries with a fork. Return bowl to the microwave and heat for about 20 seconds or until nice and warm. Serve over waffles
