Whole Wheat Waffles With Warmed Blueberry Topping

  1. Preheat your waffle iron according to manufacturer's instructions.
  2. Into a large bowl add flour, baking powder, salt and sugar; whisk until combined.
  3. In a separate bowl, whisk together the egg, milk and butter. Mix the egg mixture into the flour mixture, stirring just until combined. The batter will be a bit lumpy.
  4. Cook the waffles as directed in the instructions that came with your waffle iron.
  5. Meanwhile, in a microwave safe bowl, add blueberries and sprinkle with stevia. Heat for about 1 minute. Remove bowl from the microwave and lightly mash berries with a fork. Return bowl to the microwave and heat for about 20 seconds or until nice and warm. Serve over waffles
