Chicken Pasta Salad With Blueberries(Lo-Fat)
- 1 (9 oz.) pkg. frozen French cut green beans, thawed
- 3 c. shredded cooked chicken breast (about 1 1/2 lb.)
- 3 c. cooked fusilli
- 1 c. fresh blueberries
- 3/4 c. thinly sliced celery
- 1/4 c. thinly sliced green onions
- 1/2 c. + 2 Tbsp. plain low-fat yogurt
- 1/4 c. + 1 Tbsp. reduced calorie mayonnaise
- 3 Tbsp. blueberry vinegar
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 2 Tbsp. finely chopped fresh oregano
- Place green beans between paper towels and squeeze until barely moist.
- Combine green beans and next 6 ingredients in a large bowl. Combine yogurt and next 4 ingredients in a bowl; stir well.
- Pour over chicken mixture; toss gently.
- Cover and chill.
- Serve on lettuce-lined plates.
