Grilled Corn Salad With Cucumber, Avocado, & Feta
- 4 whole Cobs Of Fresh Corn, Grilled (or Cooked By Preferred Method)
- 1/2 whole English Cucumber, Diced
- 1/2 whole Avocado, Peeled, Pitted, And Diced
- 3 whole Jarred Roasted Red Peppers, Diced
- 1/4 cups Chopped Cilantro
- 2 whole Green Onions, Sliced Thinly
- 1/2 cups Feta Cheese Crumbles
- 3 Tablespoons Extra Virgin Olive Oil
- 1 whole Lime, Juice Only
- 1 clove Garlic, Minced
- 1 dash Cumin
- 1 dash Salt And Pepper, to taste
- Remove kernels from corn cobs and place in a medium bowl. Add the rest of the ingredients and mix well. That's it!
- Nat's Notes:
- 1. You can certainly boil the cobs or warm up some frozen corn in a skillet with a bit of oil if you don't have time to grill it.
