Fig And Goat Cheese Tart

  1. 1. Lightly spray or grease a 7" tart pan with 1 teaspoon of olive oil.
  2. 2. Combine blanched almond flour, 1.5 tablespoons of raw honey and sea salt in a medium bowl and mix together to form the crust dough.
  3. 3. Press crust mixture into the bottom and up the sides of the pan.
  4. 4. In a separate bowl, combine goat cheese, 1 tablespoon raw honey, and lemon juice, mixing until smooth.
  5. 5. Spoon mixture into the crust and smooth it out evenly.
  6. 6. Wash and remove the stems from the figs then slice into quarters. Arrange them on top of the goat cheese layer.
  7. 7. Garnish with sprigs of fresh thyme.
