Brown Sugar Crusted Apple Walnut Cake

  1. For the cake:
  2. Preheat oven to 350u0b0F.
  3. Toss the apples with 1 teaspoon of cinnamon and set aside.
  4. In the bowl of a stand mixer, mix the oil and sugar on low speed. Add eggs one at a time, beating well after each addition. Set aside.
  5. Sift together the flour, salt, baking soda, remaining 2 teaspoons cinnamon, and nutmeg. Add the dry ingredients into the wet ingredients along with the vanilla and almond extracts mix well on low speed. Add 3 1/2 cups of the apples, mixing gently with a spoon. Set aside.
  6. Butter and flour a bundt pan.
  7. For the crust, melt the butter in the microwave or in a saucepan over low heat. Add cinnamon, brown sugar and walnuts and mix well.
  8. Add the remaining 1/2 cup of apples into the bundt pan and pour the melted butter mixture over them. Pour cake batter into pan.
  9. Bake at 350u0b0F for approximately 1 hour or until toothpick inserted in center comes out clean. Set aside to cool. Using a plate or cake stand, place it over top of the cake pan and, holding it very carefully, flip it upside down and serve.
