Crisco'S Yellow Cake
- 2 1/2 c. sifted cake flour
- 1 2/3 c. sugar
- 3/4 c. milk
- 2/3 c. Crisco
- 1 tsp. salt
- 3 1/2 tsp. double-acting baking powder
- 1/2 c. milk
- 3 eggs
- 1 tsp. vanilla
- Measure into a mixing bowl the cake flour, sugar, milk, Crisco and salt. Beat vigorously by hand or mixer (medium speed) for 2 minutes. Stir in the baking powder. Add the milk, eggs and vanilla.
- Mix thoroughly by hand mixer (medium speed) for 2 minutes.
- Pour into two deep 9-inch layer pans (1 1/2-inches deep), which have been rubbed with Crisco or lined with heavy waxed paper.
- For smaller pans, fill half full. Bake cupcakes with remaining batter.
- Bake in moderate oven at 375u0b0 for 30 to 35 minutes. Cool cakes on a rack 15 minutes before removing from pan. Ice between layers, on sides and top of cake.
- Makes two 9-inch layers.
