Baked Peanut Butter And Jelly Doughnuts

  1. Preheat the oven to 350u0b0F.
  2. In a bowl, mix together the flour, sugar, baking powder and salt. In a separate bowl, whisk together the vanilla, egg, melted butter and buttermilk. Add the dry ingredients into the wet and mix until thoroughly combined.
  3. Spray a doughnut pan with nonstick cooking spray and fill each cavity about 3/4 full. Bake for 10-11 minutes. The doughnuts will not be very brown but they should be springy to the touch. Allow them to cool in the pan for about 5 minutes before turning them out.
  4. For the filling, in a small bowl, mix together the jelly and water and pour into either a pastry bag or a plastic squeeze bottle (what I used). When the doughnuts are cool enough to handle, fill them with the jelly in 3 or 4 different places.
  5. Make the glaze by combining the peanut butter, powdered sugar and milk in a small bowl, whisking until completely smooth. Add a pinch of sea salt, taste and see if you'd like it saltier. Spoon a generous amount of glaze over each doughnut and place them on a rack to set.
  6. Makes approximately 6-7 doughnuts, depending on the type of pan you used. Recipe was based on the one found on my Wilton doughnut pan.
