A Tamarind Candy Makeover

  1. Cut off a piece of tamarind from the tamarind block. Remove seeds and measure out 2 teaspoons of tamarind paste. Toss it into the pitcher of a high speed blender. Into the blender, add the pitted dates and cayenne powder. Place the lid on the pitcher and blend until dates are integrated with the tamarind. Stop blending once a thick paste forms.
  2. To form the balls, scoop out a teaspoon sized amount of the tamarind mixture. Place a goji berry in the center of the paste, then with your fingers, fold the paste over and form a ball by rolling it between the center of the palm of both hands.
  3. Next, coat the balls by rolling it in a plate filled with turbinado sugar. Set aside and repeat the process until all dates/tamarind mixture is used up.
  4. Eat immediately or chill in the refrigerator for later. Enjoy.
