Cheesy Cauliflower Casserole
- 3 c. cauliflowerets
- 1 (2 oz.) jar pimento
- 2 Tbsp. chopped green pepper
- 1 (8 oz.) can water chestnuts, sliced
- 2 eggs, hard-boiled, chopped
- 1 small onion, chopped
- 1 c. grated Cheddar cheese
- 2 Tbsp. flour
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 4 Tbsp. melted butter
- 2 c. half and half
- 1 c. processed cheese, cubed
- 2 c. crushed cheese crackers
- 3 Tbsp. grated Parmesan cheese
- Layer first 7 ingredients in 2-quart casserole in order listed. Blend flour, salt, pepper and butter in saucepan.
- Cook for 1 minute, stirring constantly.
- Add half and half and processed cheese, stirring until smooth.
- Pour over vegetables and bake at 350u0b0 for 1/2 hour.
- Top with cracker crumbs and Parmesan cheese and bake for 3 minutes longer.
- Yields 12 servings.
