Texan Style Casserole

  1. In a small bowl, blend 1 cup beef broth, tomato paste and taco seasoning mix; set aside.
  2. In saucepan over high heat, combine remaining beef broth and enough water to equal 1 3/4 cup liquid; heat to boil.
  3. Add rice and cook according to package directions.
  4. In a large skillet, brown ground beef and onion; pour off fat.
  5. In 2 quart casserole dish, layer 1/3 each of the rice, corn, and meat mixture and reserved sauce; repeat layers twice, combining the last portion of meat and sauce for the top layer. Cover; bake a 375u0b0 for 40 to 45 minutes or until hop.
  6. Garnish with corn chips and diced tomatoes.
  7. Make 4 to 6 servings.
