Texan Style Casserole
- 1 13 3/4 oz. can beef broth
- 1 6 oz. can tomato paste
- 1 pkg. taco seasoning mix
- 3/4 c. cooked rice
- 1 lb. ground beef
- 1 c. chopped onion
- 1 17 oz. can whole kernel corn drained
- corn chips
- 1 tomato diced
- In a small bowl, blend 1 cup beef broth, tomato paste and taco seasoning mix; set aside.
- In saucepan over high heat, combine remaining beef broth and enough water to equal 1 3/4 cup liquid; heat to boil.
- Add rice and cook according to package directions.
- In a large skillet, brown ground beef and onion; pour off fat.
- In 2 quart casserole dish, layer 1/3 each of the rice, corn, and meat mixture and reserved sauce; repeat layers twice, combining the last portion of meat and sauce for the top layer. Cover; bake a 375u0b0 for 40 to 45 minutes or until hop.
- Garnish with corn chips and diced tomatoes.
- Make 4 to 6 servings.
