Homemade Mixed Fruit Bread
- 1/2 pounds, 2-5/8 ounces, weight Flour, All Purpose
- 1/2 ounces, weight Sugar
- 1/4 ounces, weight Yeast, Active Dry
- 1/4 ounces, weight Salt
- 11 tablespoons, 2-1/2 teaspoons, 1/8 pinches Water
- 1/2 ounces, weight Butter
- 1 ounces, weight Candied Mixed Fruit
- In mixing bowl combine flour, sugar, yeast, and salt. Mix on low speed for one minute.
- Add water and mix on low speed for one minute.
- Then add butter and knead until smooth and elastic, about 10-15 minutes at medium speed.
- Cover dough with towel and let it rise in a warm place until volume doubles in size.
- Punch the dough down and roll out the dough to from a large rectangle 12x8 inch. Sprinkle the candied mixed fruit over the entire rectangle.
- Roll up tightly, place it in a greased loaf pan, allow to rise for one hour.
- Then bake at 200C degrees for 35 minutes.
- Serve and enjoy!
