Greg’S Best Chocolate Bark Cookies
- 2 sticks Butter, Softened
- 1 cup White Sugar
- 1 cup Brown Sugar
- 2 whole Eggs
- 1 teaspoon Pure Vanilla Extract
- 2 cups White Flour
- 1 teaspoon Baking Powder
- 1 teaspoon Baking Soda
- 1/2 teaspoons Salt
- 2-1/2 cups Oats - Blended Into A Flour
- 1 package 6 Oz. Chopped Pecans
- 1 package Chocolate Bark Chopped - 12 Oz
- Cream together softened butter, white and brown sugars, eggs and vanilla until fluffy.
- Add the flour to the butter mixture a bit at a time, combining thoroughly. Then add the baking soda, baking powder and salt. Combine well.
- Add the oatmeal (which you have whirled in a food processor to make into flour) a bit at a time until all the oatmeal is added.
- Now stir in the chopped almond bark and pecans. Chill dough for about 30 minutes.
- Drop by Tablespoons onto a parchment lined baking sheet and bake at 375F for no longer than 12 minutes. Do not over bake! Your oven temperature may vary so watch the cookies carefully - remove them from the oven as soon as they are brown around the edges. You'll have a soft, delicious cookie! Enjoy!
- ** I have substituted chocolate chips as well as chocolate bark and each works equally well - you just get a different flavor depending on which you use!
