Greg’S Best Chocolate Bark Cookies

  1. Cream together softened butter, white and brown sugars, eggs and vanilla until fluffy.
  2. Add the flour to the butter mixture a bit at a time, combining thoroughly. Then add the baking soda, baking powder and salt. Combine well.
  3. Add the oatmeal (which you have whirled in a food processor to make into flour) a bit at a time until all the oatmeal is added.
  4. Now stir in the chopped almond bark and pecans. Chill dough for about 30 minutes.
  5. Drop by Tablespoons onto a parchment lined baking sheet and bake at 375F for no longer than 12 minutes. Do not over bake! Your oven temperature may vary so watch the cookies carefully - remove them from the oven as soon as they are brown around the edges. You'll have a soft, delicious cookie! Enjoy!
  6. ** I have substituted chocolate chips as well as chocolate bark and each works equally well - you just get a different flavor depending on which you use!
