Festive Fruit And Nut Balls
- 3/4 cups Granulated Sugar
- 1/2 cups Dried Cranberries
- 1/2 cups Pitted And Snipped Dates
- 2 whole Eggs, Beaten
- 1/3 cups Walnuts, Chopped
- 1/3 cups Pistachios, Chopped And Unsalted
- 1/3 cups Pecans, Chopped
- 1 teaspoon Rum Extract
- 1 cup Shredded Coconut
- Combine sugar, cranberries, dates, and eggs in a medium saucepan and cook, stirring constantly on medium low till pale in color and temperature has reached 170F, about 6 - 8 minutes.
- Stir in walnuts, pistachios, pecans and rum extract. Let stand and cool about 45 minutes.
- With damp or lightly oiled hands, roll into 1-inch balls, then roll in coconut and place on a waxed paper-lined baking sheet until set. Store in an airtight container in the fridge for up to one week or in the freezer up to 1 month.
