Sweet Fig Sugar Cookies
- 2-3/4 cups Flour
- 1 teaspoon Baking Soda
- 1/2 teaspoons Baking Powder
- 1 cup Unsalted Butter, Softened
- 1-1/2 cup Sugar
- 1 Egg
- 1 teaspoon Vanilla
- 1-1/2 cup Fresh Figs, Chopped (for 1 1/2 Cups I Used 5 Small Figs)
- 1-1/2 teaspoon Sugar
- Sea Salt Optional Garnish
- 1. Preheat oven to 375 F.
- 2. Mix the flour, baking soda and baking powder in a large bowl.
- 3. In a mixing bowl using an electric mixer, cream the butter and sugar. Add the egg and vanilla and mix to combine.
- 4. Add the wet ingredients into the dry, mix until combined (will be a little stiff).
- 5. In a small bowl toss the chopped figs with the 1 1/2 teaspoons of sugar, then fold the figs into the dough.
- 6. Drop heaping tablespoons of dough onto an un-greased baking sheet spacing them about 2 inches apart.
- 7. Bake for 8-10 minutes or until golden. Remove pan from oven and set on a cooling rack.
- 8. Sprinkle cookies with sea salt while still hot, then remove them from the pan to cool on a cookie rack.
