Black Rice Salad With Spicy Dressing
- 1 teaspoon Olive Oil
- 1/2 cups Corn
- 4 cloves Garlic
- 1 cup Bell Peppers
- 1 cup Cooked Black Rice
- 4 leaves Basil
- 2 Tablespoons Pine Nuts, For Garnish
- 1 Egg, Cooked As Desired, To Serve (optional)
- FOR THE VINAIGRETTE:
- 2 Tablespoons Balsamic Vinegar
- 2 Tablespoons Orange Juice
- 1 teaspoon Honey
- 1/2 teaspoons Sriracha Or Hot Sauce
- 4 Tablespoons Olive Oil
- 1/4 teaspoons Salt And Pepper
- 1. In a saute pan, add olive oil. Add the corn, garlic and saute for 1 minute on low heat.
- 2. Add the bell peppers, saute for a minute and add the cooked rice.
- 3. Heat through, turn of the heat and add the basil.
- 4. For the vinaigrette, add balsamic vinegar, orange juice, honey, hot sauce, olive oil, salt and pepper and mix it well.
- 5. Add the vinaigrette little by little until the desired taste is achieved. You can add more salt, but you cannot take it away, so please note, add salt a little at a time.
- 6. Top with pine nuts and egg if desired.
