Fudgy Banana Truffles
- 1 whole Banana, Ripe, Peeled And Mashed
- 1/4 cups Almond Butter
- 1/4 cups Unsweetened Cocoa Powder
- 1/4 teaspoons Stevia
- 1/4 teaspoons Vanilla Extract
- 1/8 teaspoons Salt
- 1/4 teaspoons Cinnamon, Ground
- 1/2 cups Almond Flour
- 1/2 cups Unsweetened Coconut, Shredded
- In a bowl add banana, almond butter, unsweetened cocoa powder, stevia, vanilla extract, salt and cinnamon. Mix until combined. Add almond flour and unsweetened coconut; mix until combined.
- Line a plate or baking sheet with parchment paper.
- Take about a tablespoon of batter and roll into a ball between the palms of your hand. Place on the parchment lined baking sheet and continue the same with the rest of the batter.
- Place the baking sheet in the refrigerator or freezer to harden. Once it has hardened up a bit, you can store in a freezer safe Ziplock baggie or in an airtight plastic container.
