Chicken Parmesan

  1. Mix tomato sauce, Italian seasoning and garlic salt in 2-cup measure.
  2. Cover with wax paper.
  3. Microwave at High for 2 minutes; stir.
  4. Reduce power to Medium.
  5. Microwave 5 minutes, stirring once. Mix corn flake crumbs with Parmesan cheese and parsley flakes.
  6. Dip chicken in beaten egg, then in crumb mixture.
  7. Place in 10-inch square microwavable casserole.
  8. Cover with wax paper.
  9. Microwave at Medium-high (70%) until chicken is tender, 9 to 14 minutes, rearranging after half the cooking time.
  10. Do not turn over.
  11. Pour sauce over chicken, then sprinkle with the Mozzarella.
  12. Sprinkle with additional Parmesan.
  13. Microwave at Medium-high until Mozzarella melts and sauce is hot, 2 to 5 1/2 minutes.
  14. Makes 4 servings.
