Cheesy Onion Potato Stovie With Bacon Gravy
- 2 Tablespoons Olive Oil
- 1 Tablespoon Bacon Grease (optional)
- 4 whole White Potatoes, Scrubbed And Diced
- 1/2 whole Yellow Onion, Diced
- 2 cloves Garlic, Minced
- 3 slices Smoked Gouda
- 4 slices Thick Bacon, Chopped
- 1/2 cups Flour
- 1 cup Milk
- 2 dashes Salt And Pepper, to taste
- In a large cast iron skillet heat olive oil and melt bacon grease on medium heat.
- Add potatoes, onion, and garlic to skillet. Cook until potatoes are tender and easily broken apart, approximately 30 minutes. It helps to cover the skillet while cooking, making sure to stir and sift the potatoes frequently.
- Once tender turn heat down and add cheese, let melt. Salt and pepper to taste.
- While the potatoes are cooking prepare the gravy.
- In a medium cast iron skillet, cook chopped bacon till crispy. Remove bacon from pan and set aside. Turn off the heat.
- Gradually add flour to the bacon grease, stirring and scraping pan with a whisk till grease is absorbed by flour. Turn heat on to low, add half of milk to pan whisking roux vigorously (you don't want to burn the roux). Add the rest of milk and more if needed till gravy is consistent to your tastes. Salt and pepper to taste.
- Add cooked bacon to potatoes, pour on the gravy, and serve!
