Guava-Tequila Glazed Fajitas
- 2 cups Guava Jelly
- 4 cloves Garlic, Minced
- 1/2 cups Tequila
- 4 Tablespoons Fresh Lime Juice
- 1-1/2 pound Skirt Steak
- Salt And Pepper, to taste
- Add the guava jelly and garlic in a small sauce pan over medium heat and cook until jelly has dissolved. If the jelly has trouble dissolving add a small amount of water just to help it along. Remove from heat and add tequila and lime juice.
- Season fajitas with salt and pepper and brush with glaze.
- Heat your grill or cast iron skillet to medium high heat (you want your pan pretty hot but if the pan begins to smoke, turn your heat down just a bit). Brush grill with oil and lay your skirt steak on grill or skillet, allow meat to caramelize. Cook for 5 minutes on each side all while basting with glaze. Enjoy!
- Makes 2 cups of glaze.
