Coconut Balls
- 6 cups Coconut - Flaked, Shredded, Or Desicated
- 1 cup Icing Sugar
- 1 can (14 Oz. Can) Sweetened Condensed Milk
- 1/2 cups Coconut Oil, Melted
- 2 cups Melted Milk Chocolate Dipping Wafers Or Squares For Dipping
- In a large bowl, combine coconut, icing sugar, sweetened condensed milk, and melted coconut oil. Mix well. Use a 1 ounce ice cream style scoop to scoop balls onto a parchment paper lined tray. (You can also use your hands to form balls that are around 1" big.) Place balls into the freezer for an hour or two until hardened.
- In the top of a double boiler, melt the milk chocolate. You will need about 2 cups of chocolate once melted to coat all the coconut balls. Dip each frozen coconut ball into the melted chocolate and shake off excess chocolate. Place on a parchment lined baking sheet and sprinkle with extra coconut if desired.
