Rolls With Apricot Jam
- 2 cups Unsalted Butter
- 1 Egg
- 1 cup Granulated Sugar
- 1 cup Plain Yogurt
- 5 cups Flour
- 2 teaspoons Baking Powder
- 1 teaspoon Baking Soda
- 3 cups Apricot Jam
- 3 teaspoons Cinnamon
- First of all, prepare the dough. Preheat oven to 350 F while you work on the dough.
- Into a large bowl, add butter, egg, sugar and yogurt. Then use a wooden spoon to cream the mixture. Add some of the flour and the baking powder and soda. Mix to combine. Continue to add more flour until a soft dough forms that leaves the sides of the mixing bowl. Knead the dough for another 10 minutes, then cover it with a tea towel, and leave it to rest and rise for about 10 minutes.
- When the dough is ready divide it into two parts and place them on a lightly floured work surface. Roll out each piece and spread the cinnamon and apricot jam on top of both. Then, roll the dough into a log and pinch the dough together to seal at the end of the rolls.
- Cut the roll into equal pieces and place in a greased baking pan. Bake in a 350 F oven for 30-35 minutes and the rolls should come out golden brown.
