Dulce De Leche Bars
- 2 packages Refrigerated Sugar Cookie (approximately 16 Oz Each)
- 1 cup Brown Sugar
- 1-1/2 cup Rolled Oats Or Quick Oats
- 2 teaspoons Vanilla
- 1 can (13 Oz. Size) Dulce De Leche "La Lechera"
- 1. Heat oven 350 F. Grease a 9x13 baking pan.
- 2. In a large bowl stir or knead together 1 roll of sugar cookie dough, 1/2 cup of sugar, 3/4 cups oats, 1 teaspoon vanilla. Press mixture evenly into the baking pan until you have an even crust. Bake for 14 minutes. (The crust will continue to bake in step 4).
- 3. While crust is in the oven, soften dulce de leche by heating it over low heat in a small saucepan until it is soft enough to spread easily on crust. When crust is done remove it from the oven and set it the dish on a rack. Spread the softened dulce de leche over the top.
- 4. Stir or knead the rest of the cookie ingredients: 1 roll sugar cookie dough, 1/2 cup sugar, 3/4 cups oats, 1 teaspoon vanilla. Crumble this mixture evenly over the dulce de leche. Bake for 20-25 minutes or until somewhat golden brown then remove dish from the oven and set it on a rack. Bars will continue to cook once you take them out of the oven.
- 5. Let them cool for 30 minutes. Then refrigerate for 1 hour.
- 6. Cut into squares of your desired size and enjoy!
