Double Chocolate-Mint Chip Cookies

  1. Heat oven to 375u0b0.
  2. In top of double boiler, melt 3/4 cup morsels over hot (not boiling) water; stir until smooth.
  3. Cool to room temperature.
  4. Combine flour, baking soda and salt; set aside. In large bowl, beat butter, brown sugar, white sugar and vanilla extract until creamy.
  5. Add melted morsels and egg; beat well. Gradually blend in flour mixture.
  6. Stir in remaining morsels and nuts.
  7. Drop by rounded measuring tablespoonfuls onto ungreased cookie sheet.
  8. Bake about 10 minutes.
  9. Allow to stand for 2 to 3 minutes before removing from cookie sheet; cool completely before covering.
  10. Yield:
  11. 1 1/2 dozen.
