10-Grain Carrot Muffins
- 1 cup Bob's Red Mill 10-Grain Cereal
- 1-1/4 cup Milk
- 1/2 cups White Sugar
- 1/2 cups Brown Sugar
- 1 cup Sour Cream
- 1/2 cups Applesauce
- 1 teaspoon Vanilla Extract
- 1 whole Egg
- 2 cups Grated Carrot
- 1-1/2 cup Whole Wheat Flour
- 1/2 teaspoons Baking Powder
- 1/2 teaspoons Baking Soda
- 1/2 teaspoons Salt
- 1/2 teaspoons Nutmeg
- 1/2 teaspoons Ground Ginger
- 1/4 teaspoons Cloves
- 1/4 teaspoons Allspice
- 1 teaspoon Cinnamon
- 1. Preheat oven to 400 degrees and spray a muffin pan with non-stick spray.
- 2. Soak the cereal in the milk for 10 minutes.
- 3. While the cereal is softening, combine the sugars, sour cream, applesauce, vanilla, and egg.
- 4. Add the cereal and carrots to the sour cream mixture.
- 5. Add the dry ingredients.
- 6. Fill muffin pan until 3/4 full, then bake for 15 minutes.
