10-Grain Carrot Muffins

  1. 1. Preheat oven to 400 degrees and spray a muffin pan with non-stick spray.
  2. 2. Soak the cereal in the milk for 10 minutes.
  3. 3. While the cereal is softening, combine the sugars, sour cream, applesauce, vanilla, and egg.
  4. 4. Add the cereal and carrots to the sour cream mixture.
  5. 5. Add the dry ingredients.
  6. 6. Fill muffin pan until 3/4 full, then bake for 15 minutes.
  7. Enjoy!
