Roasted Garlic Smashed Potatoes With Apple Cider Gravy
- FOR THE POTATOES:
- 3 pounds Small Red Potatoes, Scrubbed And Washed Well
- 1 cup Evaporated Milk
- 2 Tablespoons Butter
- 3/4 teaspoons Kosher Salt
- 1 head Roasted Garlic, Cloves Removed From Husks
- 1/2 cups Sour Cream
- 1/2 cups Parmesan Cheese, Shredded
- FOR THE GRAVY:
- 2 Tablespoons Butter
- 1/4 cups All-purpose Flour
- 2 cups Chicken Or Turkey Broth
- 1 cup Good Quality Apple Cider
- 1 cup Evaporated Milk
- 1/2 teaspoons Kosher Salt
- 1/4 teaspoons Black Pepper
- 1 Tablespoon Roasted And Mashed Garlic (optional)
- For the potatoes:
- Place potatoes in a large pot and fill with water. Place pot on stove. Bring to a boil and cook potatoes until they pierce easily with a fork, about 15 minutes.
- Drain water completely off of the potatoes and start to smash with a potato masher. Mash in the milk, butter, salt, garlic, sour cream, and cheese. Continue mashing until they reach the consistency desired.
- For the gravy:
- In a medium-sized sauce pan, melt the butter, stir in flour, and let cook for 1 minute. Add in broth and cider, stirring constantly until it starts to thicken. Continue stirring and add in milk, salt and pepper and let simmer until it reaches your desired thickness. Stir in mashed roasted garlic if desired.
