Roasted Cauliflower With Apples
- 1 head Cauliflower, Cored And Cut Into Florets
- 1 Tablespoon Olive Oil
- 2 teaspoons Curry Powder
- 1/2 Tablespoons Unsalted Butter
- 1 whole Gala Apple, Or A Similar Type
- Salt And Pepper, to taste
- 1/4 cups Gruyere Cheese, Freshly Grated
- Preheat oven to 400 F.
- In a large bowl, combine cauliflower florets, olive oil and curry powder. (If you can, I recommend that you use Madras curry powder.) Mix thoroughly and toss evenly onto a baking sheet. Roast for 25 minutes.
- While cauliflower is roasting, melt butter in a saute pan over medium heat. Core, then thinly slice the apple and add it into the saute pan. Saute for 5 to 8 minutes until golden.
- Combine roasted cauliflower and apples in a large bowl and season with salt and pepper. Grate cheese on top and serve immediately.
